Our HICKORY CASK is an organic Canadian Whisky distilled at Straight Whisky strength and bottled at 100 proof (50% alc./vol.). The organic soft white winter wheat was harvested 2012 to 2013 along the Oak Ridges Moraine in Schomberg, York County, Ontario, and milled by K2 Mill in nearby Beeton, Ont. From there the flour was mashed, fermented, distilled, and aged for over three years by us at 90 Cawthra Avenue, Toronto. The cask itself was the idea and passion of Pete Bradford, "Canada's Last Cooper", at his Carriage House Cooperage in Prince Edward County, Ont. Made with locally sourced Ontario hickory, charred to a medium toast. While the barrel was planned to be a more standard 110L, the difficulty in coopering hickory led to a 77L cask, and Pete swearing off attempting it again! This was a one of a kind - a true "single barrel" whisky! Only 48 bottles were made!
